Dry rub Recipe:

  • 1/2 cup brown sugar
  • 1/4 cup salt
  • 1/4 cup paprika
  • 1 Tbs garlic powder
  • 1Tbs onion powder
  • 1 Tbs black pepper
  • 1 tsp lemon zest

Process:

  • Coat chicken breasts (we used 3 large boneless breasts) with maple syrup and the slather on the rub.
    (If you do not have maple syrup, you can use Honey – taste will differ)
  • Let stand for 2 hours in the fridge.
  • Smoke on racks for 1 hr at 225ºF with your favorite wood chips. (we used a mix of maple & Eucalyptus)
  • Place in pan and put 4 Tbs of cubed butter on the chicken breasts.
  • Seal with aluminum foil and cook for 1/2 hr at 225ºF
  • Remove from pan and dunk the chicken breasts in a mixture of 1 cup bbq sauce (your favourite) and 1 cup apple juice.
  • Smoke directly on racks for an additional 1/2 hr.
  • Remove from smoker and immediately drizzle with warmed honey.
