Dry rub Recipe:
- 1/2 cup brown sugar
- 1/4 cup salt
- 1/4 cup paprika
- 1 Tbs garlic powder
- 1Tbs onion powder
- 1 Tbs black pepper
- 1 tsp lemon zest
Process:
- Coat chicken breasts (we used 3 large boneless breasts) with maple syrup and the slather on the rub.
(If you do not have maple syrup, you can use Honey – taste will differ) - Let stand for 2 hours in the fridge.
- Smoke on racks for 1 hr at 225ºF with your favorite wood chips. (we used a mix of maple & Eucalyptus)
- Place in pan and put 4 Tbs of cubed butter on the chicken breasts.
- Seal with aluminum foil and cook for 1/2 hr at 225ºF
- Remove from pan and dunk the chicken breasts in a mixture of 1 cup bbq sauce (your favourite) and 1 cup apple juice.
- Smoke directly on racks for an additional 1/2 hr.
- Remove from smoker and immediately drizzle with warmed honey.
